This has got to be one of my all time favorite healthy snack recipes! I have personally made these no-bake peanut butter energy bites about 100 times. They are just that scrumptious and addictive.
These peanut butter energy balls are the perfect snack, breakfast, and even late-night treat! They are not only made with simple and clean ingredients, but they are also vegan and gluten-free. Plus, anyone can make them since all you have to do is mix the ingredients together and roll out balls. So simple and so easy!
If you are a fan of peanut butter, like me, you will just LOVE these snack bites. The cold creamy peanut butter flavor in combination with the sweet crunch from the chocolate chips and crushed peanuts is to die for. They are the perfect make-ahead recipe to keep on hand for healthy snacking or for an on-the-go breakfast. Seriously, there is absolutely no guilt eating a lot of these little guys!

You’ll only need a handful, simple ingredients to get this easy snack recipe going! You probably have most of these ingredients in your pantry already. For this plant-based, easy recipe, you’ll need some maple syrup, rolled oats, and, of course, lots of peanut butter!
- Rolled Oats – gluten-free or regular
- Creamy Peanut Butter – I used unsalted peanut butter, so I added 1/4 tsp of salt to the recipe!
- Ground Flaxseed
- Chia Seeds
- Maple Syrup or Honey
- Vanilla Extract
- Dry Roasted Peanuts
- Mini Chocolate Chips – I used a dairy-free, vegan brand!
Substitution Options for Best Ever Peanut Butter Energy Balls
If you find yourself missing an ingredient or two, try these! I recommend substituting no more than 1-2 ingredients.
Unsalted Peanut Butter – swap 1 for 1 with salted peanut butter and leave out the additional salt called for in the recipe!
Maple syrup – Swap out for honey.
Are you gluten-free? Make sure to use gluten-free rolled oats!

This recipe is so simple and really easy to make. You’ll be in and out of the kitchen and have snacks ready for the entire week! And all you need is baking sheet, parchment paper, and a mixing bowl.
Here, I’ll walk you through the steps to make these delicious, healthy peanut butter energy balls!
In a large bowl, add all the ingredients and mix with a spatula until fully combined.
Then, cover the bowl and place in the refrigerator for around 60 minutes while the mixture cools. This will make it really easy to roll the balls out!

- 1 + 1/4 cup rolled oats *
- 1/2 cup creamy peanut butter, unsalted *
- 3 Tbsp ground flaxseed
- 1 Tbsp chia seeds
- 1/4 tsp salt
- 1/3 cup 100% pure maple syrup or honey
- 1.5 tsp vanilla extract
- 1/4 cup peanuts, roughly chopped
- 1/4 cup mini chocolate chips
- In a large bowl, mix all ingredients together.
- Cover the mixing bowl and chill dough in refrigerator for 1 hour.
- Using your hands, form 20 – 25 balls about 1 inch in size each.
- Enjoy and store in sealed container in the refrigerator for 7 – 10 days or freeze for up to 3 months.
Use gluten-free or regular rolled oats.
Use salted or unsalted peanut butter. If salted, omit 1/4 tsp salt.
