This spicy buffalo chicken flatbread recipe is so tasty that it is hard to believe they are healthy. The combination of the homemade ranch dressing, the mozzarella cheese, and the buffalo chicken is out-of-this-world delicious. This recipe is brother and dad approved!
I do have to say, one of my favorite things about this recipe is how easy the flatbreads are to make. Any level cook can make them since we use simple ingredients (including store-bought pita).
Seriously, everyone will just love this recipe and beg you to make it every Sunday! It’s packed with protein from the chicken, has the best flavor for the buffalo sauce, and the flatbread is crispy.

- Greek yogurt: For the base of this healthy ranch dressing, you need 1/2 cup of non-fat or full-fat plain Greek yogurt.
- Dijon mustard: For flavor and tang, grab some dijon mustard.

- Garlic powder: 1 teaspoon of garlic powder adds the best flavor to this homemade ranch.
- Onion powder: Plus some onion powder.

How to make buffalo chicken flatbread
Everyone is going to love these easy-to-make spicy buffalo chicken flatbreads. They are healthy, flavorful, and cheesy! Here are detailed step-by-step instructions with pictures for visual reference so any level cook can make them. Preheat your oven to 400°F and line one or two large baking sheets with parchment paper. The pitas should NOT overlap, so I recommend two sheets.
Step 2:
Next, in a small mixing bowl, prepare your ranch dressing by combining all the ingredients together. Taste and adjust seasonings to your liking.

Then, place two pieces of pita on each lined baking sheet and bake for 3 – 4 minutes.
Step 4:
Meanwhile, toss the shredded chicken with 2 – 3 Tablespoons of buffalo sauce. The chicken should be coated but not drenched.
Step 5:
Once the pitas are done, carefully remove the sheets from the oven. Use the back of a spoon to spread 1 – 2 Tablespoons of ranch dressing and 1 – 2 Tablespoons of buffalo sauce on each pita, as if you were making a pizza.
Then, sprinkle 1/4 cup of shredded mozzarella cheese and 1/3 cup of shredded chicken on top of each pita. You can add more cheese if you desire. Sprinkle the thinly sliced white parts of the green onion on top.
Step 6:
Bake for another 7 – 10 minutes, until the sides are golden brown and the cheese has melted.
