    The Best Ever Healthy Chocolate Chip Blondies

    Not going to lie, these festive protein blondies are absolutely amazing. The center is slightly underdone and every bite melts in your mouth; everything you look for in a rich and delicious dessert. In fact, these chocolate chip sprinkle blondies are so gooey, moist, and delicious that I could not resist going back to the kitchen every few hours for another!

    I am not exaggerating when I say, my family and I finished an entire batch in less than a day. I mean, who can resist a perfectly gooey, chocolate chip blondie that screams Christmas and the Holidays?

    And you know what, want to know the secret ingredient that makes these blondies protein-packed and super gooey? Chickpeas! Yup! It sounds weird and ~way too healthy~ but seriously chickpeas create such a very soft and fudgy texture (plus they are vegan!). I promise you, you CANNOT even taste them. I refuse to eat desserts that taste like vegetables. Because then is it even a dessert at that point? The answer is clearly no. If you are going to enjoy a dessert, do it right!

    Festive sprinkle healthy blondies that are rich, moist, plant-based, chocolatey, and incredibly tasty. The perfect way to sneak some veggies into your day too!

    Ingredients Used for Healthy Sprinkle Blondies

    You’ll only need a handful, simple ingredients to get this easy dessert recipe going! I am all about simplicity and ease, so don’t worry, you won’t need to go to the supermarket and buy a lot of expensive ingredients and spices. You probably have most of these ingredients in your pantry already. For this easy recipe, you’ll need some unsweetened apple sauce, some spices, rolled oats, and, of course, some cinnamon!

    • Unsalted chickpeas, drained and rinsed
    • Unsalted creamy almond butter
    • Maple syrup
    • Vanilla extract
    • Coconut sugar *
    • Almond flour
    • Ground cinnamon
    • Baking soda
    • Baking powder
    • Salt
    • Chocolate chips
    • Sprinkles

    Substitution Options for Festive Healthy Chocolate Chip Blondies

    If you find yourself missing an ingredient or two, try these! I recommend substituting no more than 1-2 ingredients.

    Almond flour – swap 1 for 1 with regular all-purpose flour or gluten free flour.

    Coconut sugar – I recommend trying light brown sugar here!

    Salted Chickpeas? Totally ok to use! Just do not add the extra salt called for in the ingredients.
    Salted Almond Butter? No worries! Just omit the extra salt called for in the recipe.

    What You’ll Need to Make Healthy Blondies

    For this easy recipe, you’ll only need a couple of kitchen tools making the clean up super easy! Plus you only need a few things to get you going, including a mixing bowl, banking tray and an oven. This healthy dessert recipe could not be any simplier!

    • Food Processor
    • 8×8 Baking Tin
    • Parchment paper
    • Stirring utensil
    • Measuring tools: 1/4 teaspoon, 1/2 teaspoon, 1 teaspoon, 1 Tablespoon, 1/4 cup, 1/2 cup

    How to Make the Gooey Festive Healthy Blondies

    These delicious, fudgy chocolate chip blondies are not only super nutritious, but they are also super easy to make. Think one bowl, easy cleanup, and no hassle!

    To start, preheat your oven and lightly grease or line an 8” x 8” tin with parchment paper. I like to line and grease my pan by cutting a little piece of parchment paper, placing it into the bottom of the pan, and spraying it with nonstick spray. This will make it so easy to take your healthy chocolate chip blondies out of the pan.

    Next, using a colander, drain and rinse your can of chickpeas under COLD water for at least 30 seconds. Gently pat them dry and add them to the food processor.

    Now, it is time to add the rest of the ingredients – excluding the chocolate chips and sprinkles – into a food processor. Blend the mixture until completely smooth. This should take about 45 seconds to 1 minute.

    Once completely smooth and silky, remove the blade from the food processor and hand fold in your chocolate chips and sprinkles. Remember to save a few to sprinkle on top before baking!

    Using a spatula, evenly spread the batter into the greased tin and sprinkle the rest of the chocolate chips and sprinkles on top.

    Bake you delicious, gooey chocolate chip blondies and let cool a little before serving.

    How to Store Extra Festive Chocolate Chip Blondies

    Make extra? No worries, I love to save my extras in a sealed airtight container at room temperature for 4 to 5 days or in the fridge for 5 to 6 days!

    Ingredients
     

    • 1 15oz can of chickpeas, unsalted, drained and rinsed
    • 6 Tbsp creamy almond butter, unsalted
    • ⅓ cup maple syrup
    • 2 tsp vanilla extract
    • ¼ cup coconut sugar *
    • ¼ cup almond flour
    • ½ tsp cinnamon
    • ½ tsp baking soda
    • ¼ tsp baking powder
    • ⅛ tsp salt
    • ⅓ cup chocolate chips
    • ¼ cup sprinkles

    Instructions

    • Preheat your oven to 350F and lightly grease and line an 8” x 8” tin with parchment paper. 
    • Drain and rinse chickpeas under COLD water for at least 30 seconds. Gently pat dry.
    • Add all ingredients – excluding the chocolate chips and sprinkles – into a food processor. Blend until completely smooth. For about 45 seconds to 1 minute. 
    • Remove the blade and fold in half of the chocolate chips and sprinkles with a spatula. Save a few for the top!
    • Evenly spread the batter into the greased tin and sprinkle the rest of the chocolate chips and sprinkles on top.
    • Bake for 25-30 mins, or until a toothpick comes out clean.
    • Let cool before serving, and enjoy!

    Notes

    If using salted almond butter or chickpeas, OMIT the extra 1/8 tsp of salt called for in recipe.
    * Best substitute for coconut sugar is light brown sugar. Granulated sugar should work as well!
    Substitute regular all-purpose or gluten-free flour for almond flour. DO NOT substitute with coconut flour.
