Best ever grain free coconut chocolate fudge cookies
I promise you, once you try these paleo double chocolate coconut cookies, you won’t be able to stop making them! Not only are they a serious hit in my household, but they are also nutritious, clean, healthy, and SO DAMN TASTY! I mean who doesn’t love a dense and fudgy cookie?!
The combination of the double chocolate chip and the slight coconut after taste is something special. They are not overly sweet, nor are they super coconut-y. So don’t worry if you are not a huge coconut fan!
Also, I made these cookies EXTRA fudgy and dense by not adding any baking powder or baking soda. Fun trick right?! That means that these cookies won’t rise and the texture will remain thick and dense. Every bite will melt in your mouth…. promise.
I mean everyone needs these cookies in their lives! They are GLUTEN FREE, GRAIN FREE, DAIRY FREE, LOW CARB, REFINED SUGAR FREE & PALEO. Um….. what?!

These dense and fudgy double chocoalte chip cookies are clean, nutritious, and incredibly tasty! You only need a few very simple ingredients for this dessert recipe. There are no preservatives, added sugars, or random ingredients!
Here are three ways that I made these grain free coconut chocolate cookies more nutritious and health-friendly without taking away from the taste!
- Used honey and coconut sugar instead of refined sugar. By using this type of healthier sweetener, I am removing all refined sugars, and sweetening naturally!
- I used coconut oil which is full of healthy fats! Also to make these coconut cookies light and soft.
- Used almond flour to make these soft cookies gluten free, grain free, and low carb!

You’ll only need a few, simple ingredients to get this easy fudge cookie recipe going! I am all about simplicity and ease, so don’t worry, you won’t need to go to the supermarket and buy a lot of expensive ingredients and spices. You probably have most of these ingredients in your pantry already.
For this easy low carb cookie recipe, you’ll need almond flour, honey, and of course, some coconut oil and cacao powder!
- Almond milk

Easy ingredient substitutions for low carb cookies
You guys probably know by now that I love simple and easy recipes! If you don’t love every ingredient in this one, I am here to help you out with a list of the very best substitutions for these paleo cookies!
Honey: Simply swap out the honey with maple syrup.
Almond milk: Use any type of nut milk here! I reccomened trying cashew first.
Coconut Sugar: Easily substitute coconut sugar with light brown sugar!
Can I make these cookies vegan?
I haven’t tested this recipe with a flax egg, but I think it should work well! If you try, please let me know in the comments!!

For this easy paleo cookie recipe, you’ll only need a couple of kitchen tools making the clean up super easy! You’ll need a mixing bowl to make these gluten free & dairy free cookies and an oven to bake them.
- Baking Sheet
- Parchment Paper
- Mixing Bowl
- Stirring Utensil
- Measuring cups: 1 tsp, 1 Tbsp, 1/4 cup, 1/3 cup, 1/2 cup, 1 cup.
How to make grain free coconut chocolate fudge cookies
My favorite thing about this simple and easy cookie recipe (besides the taste of course) is how easy they are to make! This recipe is the absolute perfect healthy dessert; plus, these healthy double chocolate paleo cookies are grain free, gluten free, and low carb!
First, preheat your oven to 350F and line a baking sheet with parchment paper.
Next, in a large mixing bowl, whisk the egg. Then, add in the almond milk, honey, melted coconut oil, vanilla extract, and coconut sugar. Whisk until fully combined.
After that, add in the almond flour and cacao powder. I used a spatula here! Then, hand fold in your chocolate chips (you can save some to press on top if you would like!)
Once the cookie dough is ready, using your hands, form 14 – 16 balls (about 1.5 Tablespoons of dough) and evenly space them across the lined baking tray. You can make bigger cookies as well (just cook for additional 1 -2 minutes). Gently press down to form a cookie shape and bake!
The cookies are double chocolate, so they will not show browning color. Make sure you do not over-bake!

- 1 egg
- 1/3 cup almond milk
- 1 Tbsp honey
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/4 cup coconut sugar
- 1 + 2/3 cup almond flour, packed
- 1/4 cup cacao powder
- 1/2 cup chocolate chips
- Preheat oven to 350F and line baking sheet with parchment paper.
- In a large bowl, whisk egg.
- Whisk in almond milk, honey, coconut oil, vanilla extract, and coconut sugar.
- Add in almond flour and cacao powder.
- Using a spatula, hand fold in chocolate chips.
- Roll 14 – 16 balls and then gently flatten into cookie shape. These cookies do not spread much.
- Bake for 8 – 10 minutes.
