Healthy Banana Blueberry Crumb Loaf

Description

A fluffy banana blueberry crumb loaf that is healthy, gluten-free, and refined sugar-free. Made with simple and nutritious ingredients, this delicious banana crumb bread is perfect for breakfast, an afternoon snack, or even as pre-workout fuel.


Ingredients

Bread:

  • 1 egg
  • 2 ripe bananas
  • 2.5 Tbsp vanilla extract
  • 1/3 cup maple syrup
  • 3 Tbsp greek yogurt
  • 1 Tbsp melted coconut oil
  • 1 cup almond flour
  • 1 1/2 cup homemade oat flour *
  • 1 Tbsp coconut sugar **
  • 2 tsp ground cinnamon
  • 1/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 cup fresh blueberries

Crumb Topping:

  • 1 Tbsp coconut sugar
  • 1 Tbsp melted coconut oil
  • 1 Tbsp homemade oat flour
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350F and line and grease a 9″ x 5″ bread tin.
  2. In a small bowl, whisk the egg. 
  3. In a large bowl, mash bananas with a fork. Add in the whisked egg, vanilla extract, maple syrup, yogurt, and coconut oil. Fully combine.
  4. Now whisk in almond flour, homemade oat flour*, coconut sugar, cinnamon, baking powder, and baking soda. until fully combined. Hand fold in fresh blueberries. Pour batter into the lined bread tin.
  5. In a small bowl, add all crumb topping ingredients and combine. Should be a sand texture. Sprinkle mixture on top of the loaf.
  6. Bake for 40-45 minutes, or until a toothpick comes out clean. 
  7. Let cool before serving, and enjoy!

Notes

* MAKE YOUR OWN OAT FLOUR: simply blend your favorite brand of rolled oats in the blender for around 20 to 30 seconds until smooth. It should be a “flour” consistency.

** You can substitute light brown sugar for the coconut sugar.
