The Best Ever Paleo Cake Bars
Anyone else love a fluffy piece of cake? Because I sure do! That’s why I decided to make these fun and healthier cake bars that taste like cookie dough! They are delicious, super fluffy, and taste like a classic cake! No joke.
I have to admit I am in love with these paleo cake bars. They only call for minimal ingredients and are sweetened with maple syrup and a dash of coconut sugar! I mean, the warm chocolate chips in combination with the fluffy cake is truly something special. Every bite melts in your mouth. You can’t even tell that they are paleo, gluten-free, and healthified – seriously! My whole family is obsessed – we love enjoying them as an easy dessert and sometimes as an afternoon snack.
I am telling you, these delicious and fluffy paleo cake bars are incredible! Not only do they taste like cookie dough, but they are made with minimal, nutrient-rich ingredients and are perfect for the Holidays!
Ingredients Used for Healthy Cookie Dough Cake Bars
You’ll only need a handful, simple ingredients to get this easy snack recipe going! I am all about simplicity and ease, so don’t worry, you won’t need to go to the supermarket and buy a lot of expensive ingredients and spices. You probably have most of these ingredients in your pantry already. For this easy recipe, you’ll need some almond flour, coconut flour, applesauce, and, of course, some chocolate chips!
- Maple syrup – the perfect natural sweetener!
- Vanilla extract
- Coconut oil, melted – the secret to making this cake moist without butter!
- Coconut sugar
- Almond flour

- Chocolate chips – use dark chocolate chips, vegan chocolate chips, or semi-sweet chocolate chips!
Substitution Options for Fluffy Cake Bars
If you find yourself missing an ingredient or two, try these! I recommend substituting no more than 1-2 ingredients.
Almond flour – swap 1 for 1 with regular all-purpose flour or gluten free flour.
Coconut sugar – I recommend trying light brown sugar here!
Unsweetened applesauce – simply used sweetened apple sauce!

How to Make the Paleo Cookie Dough Cake Bars
This recipe is so simple and really easy to make. You’ll be in and out of the kitchen in less than 25 minutes! And all you need is baking sheet, parchment paper, a mixing bowl, and an oven.
Here, I’ll walk you through the steps to make these delicious, healthy fluffy cake bars
To start, preheat your oven to 350F and lightly grease or line an 8” x 8” tin with parchment paper. I like to line and grease my pan by cutting a little piece of parchment paper, placing it into the bottom of the pan, and spraying it with nonstick spray. This will make it so easy to take your healthy cake bars out of the pan.
In a large bowl, whisk your eggs and then mix in the applesauce, maple syrup, coconut oil, vanilla extract, and coconut sugar. Next, add in your dry ingredients – the almond flour, coconut flour, baking soda and baking powered – and mix with a spatula until fully combined. Finally, gently fold in the chocolate chips. Make sure to save a few the sprinkle on top!
Using a spatula, evenly spread the batter into the greased tin and sprinkle the rest of the chocolate chips and sprinkles on top.
Bake and enjoy your delicious fluffy paleo cake bars!
I highly recommend storing them in an airtight container at room temperature for 5 -6 days!

- 2 eggs, room temperature
- 1/4 cup apple sauce, unsweetened or sweetened
- 1/3 cup maple syrup
- 1.5 tsp vanilla extract
- 2 Tbsp coconut oil, melted
- 3 Tbsp coconut sugar
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 cup chocolate chips
- Preheat oven to 350F and lightly grease and line an 8” x 8” tin with parchment paper.
- In a large mixing bowl, whisk eggs.
- Add in apple sauce, maple syrup, vanilla extract, coconut oil, and coconut sugar. Mix until combined.
- Add in almond flour, coconut flour, baking soda, and baking powder. Mix with a spatula until fully combined.
- Fold in chocolate chips and evenly spread the batter into the greased tin. Sprinkle some extra chocolate chips on top.
- Bake for 25 – 30 minutes, or until a toothpick comes out clean.
- Let cool before serving, and enjoy!
Swap almond flour out for gluten-free four.
Swap out coconut sugar with light brown sugar.
