    Attention french toast lovers!!! Consider the game changed with these gooey peanut butter and fruit stuffed french toast rolls. I simply cannot get enough of these delicious little french toast logs. I think I’ve eaten them every day for breakfast this week.

    These peanut butter and jelly french toast rolls ups taste just like classic french toast, but they are loaded with creamy peanut butter, naturally sweet fruit, and you can dip them in syrup! They best ever fun & healthy finger food.

    I think I forgot to mention how easy they are to make! I timed myself and I was in and out of the kitchen in less than 15 minutes! Easily make double or triple the recipe or if you are just cooking for yourself half the recipe! Perfect for busy moms, working people, students, athletes, and kids!

    Everyone will just go crazy about how fun and delicious these pb&j french toast roll ups are to eat! They are a huge hit in my house.

    These sweet and mouthwatering peanut butter stuffed french toast roll-ups are clean, nutritious, and incredibly tasty! To make these french toast logs, you only need a few very simple ingredients, all of which are healthier alternatives to what you’ll find in store-bought brands. There are no preservatives or random ingredients in this recipe! Here are four ways that I made these healthy peanut butter and fruit french toast roll ups more nutritious and health-friendly without taking away from the taste!

    1. I used fresh berries and fruit instead of store-bought jelly! So there are no refined sugars in this healthy breakfast!
    2. Used almond milk as a great source of calcium!
    3. I used one ingredient peanut butter, so there is no added sugar!
    4. Used eggs to boost up the protein and healthy fats!

    You’ll only need a few, simple ingredients to get this easy breakfast and brunch recipe going! I am all about simplicity and ease, so don’t worry, you won’t need to go to the supermarket and buy a lot of expensive ingredients and spices. You probably have most of these ingredients in your pantry already. For this healthy breakfast recipe, you’ll need cinnamon, maple syrup or honey, and of course, peanut butter and bread!

    • Bread
    • Peanut butter – or any nut butter
    • Fresh fruit – I used strawberries!
    • Eggs
    • Almond milk – or any milk / plant mylk
    • Maple syrup
    • Vanilla extract

    Easy Ingredient Substitutions for Peanut Butter french toast roll ups

    You guys probably know by now that I love simple and easy recipes! If you don’t love every ingredient in this one, I am here to help you out with a list of the very best substitutions! This healthy breakfast recipe is super customizable.

    If you are vegan: Simply leave out the eggs and add a 1/3 cup more almond milk!

    Peanut Butter: You can used almond butter, cashew butter, and sun-butter if you are nut-free!

    Strawberries: If you don’t have strawberries just use any fruit! Blueberries, raspberries, blackberries, or even apple and banana!

    Maple Syrup: Simply used honey instead or whatever liquid sweetener you like!

    Almond Milk: You can use any type of milk you want! Cashew milk, oat milk, regular milk, skim milk, fat-free milk….

    What You’ll Need to Make Healthy French Toast Rolls

    For this easy stuffed french toast recipe, you’ll only need a couple of kitchen tools making the clean up super easy! You’ll need a shallow bowl to dip these healthy french toast rolls in and a saute pan to cook them.

    • Shallow Bowl
    • Whisk or Fork
    • Saute or Frying Pan
    • Tongs
    • Measuring cups: 1/2 teaspoon, 1 teaspoon, 1 Tablespoon, 1/3 cup.

    How to Make Healthy peanut butter and fruit stuffed french toast roll ups

    My favorite thing about this simple and easy brunch recipe (besides the taste of course) is how easy they are to make! This recipe is the absolute perfect healthy breakfast; plus, these french toast rolls are gluten-free, dairy-free, and refined sugar free!

    First, remove the crust from each slice of bread and roll each slice out with a rolling pin. They should be thin.

    See step-by-step tutorial below. On one short end of the slice, spread a 1-inch strip of about 1/2 to 1 Tablespoon of peanut butter. Next, add a sprinkle of diced strawberries (or any other fruit). Then, on the oppotise short end of the slice, spread a tiny amount of peanut to seal the roll-up. Roll the bread up tightly and repeat with the remaining pieces of bread.

    After that, in a shallow bowl, whisk together eggs, almond milk, maple syrup, vanilla extract, and cinnamon.

    Then, heat a pan to medium and melt a tablespoon of butter or use cooking spray.

    Dip each roll-up in egg mixture, coat very well, and then place into pan seam side down. Allow roll-ups to cook for 1 – 2 minutes per side until golden brown and slightly crisp on the outside. Keep turning until golden on all sides.

    Top with more fresh fruit and serve immediately with maple syrup. Enjoy you healthy peanut butter and jelly french toast roll ups!
