If you are vegan: Simply leave out the eggs and add a 1/3 cup more almond milk!
Peanut Butter: You can used almond butter, cashew butter, and sun-butter if you are nut-free!
Strawberries: If you don’t have strawberries just use any fruit! Blueberries, raspberries, blackberries, or even apple and banana!
Maple Syrup: Simply used honey instead or whatever liquid sweetener you like!

For this easy stuffed french toast recipe, you’ll only need a couple of kitchen tools making the clean up super easy! You’ll need a shallow bowl to dip these healthy french toast rolls in and a saute pan to cook them.

- Whisk or Fork
- Saute or Frying Pan

- Measuring cups: 1/2 teaspoon, 1 teaspoon, 1 Tablespoon, 1/3 cup.
How to Make Healthy peanut butter and fruit stuffed french toast roll ups
My favorite thing about this simple and easy brunch recipe (besides the taste of course) is how easy they are to make! This recipe is the absolute perfect healthy breakfast; plus, these french toast rolls are gluten-free, dairy-free, and refined sugar free!
First, remove the crust from each slice of bread and roll each slice out with a rolling pin. They should be thin.
See step-by-step tutorial below. On one short end of the slice, spread a 1-inch strip of about 1/2 to 1 Tablespoon of peanut butter. Next, add a sprinkle of diced strawberries (or any other fruit). Then, on the oppotise short end of the slice, spread a tiny amount of peanut to seal the roll-up. Roll the bread up tightly and repeat with the remaining pieces of bread.
After that, in a shallow bowl, whisk together eggs, almond milk, maple syrup, vanilla extract, and cinnamon.
Then, heat a pan to medium and melt a tablespoon of butter or use cooking spray.
Dip each roll-up in egg mixture, coat very well, and then place into pan seam side down. Allow roll-ups to cook for 1 – 2 minutes per side until golden brown and slightly crisp on the outside. Keep turning until golden on all sides.
