Healthy Pumpkin Spice Brownies (vegan)

Brownies might be one of my favorite baked goods. Correction… FUDGY brownies. Ever since I was a little kid, brownies have been my go-to dessert. Nothing, I repeat nothing, beats a warm, fudge brownie with a scoop of ice cream. Seriously. I do not think anything is better!

So why not transform a classic fudgy brownie in a seasonal Fall treat?!

I am not going to lie, these pumpkin spice chickpea brownies are absolutely amazing. The texture is incredible: the center is slightly underdone and every bite melts in your mouth. These chocolate chip pumpkin spice brownies are so gooey, rich, and moist. I could not resist going back to the kitchen every few hours for another! To be completely honest, I am not exaggerating when I say, my roommate and I finished an entire batch in less than 24 hours. I mean, who can resist a perfectly gooey, chocolate chip fudgy brownie that tastes like pumpkin pie?

I must say, I do love baking with chickpeas. It sounds weird and ~way too healthy~ but seriously they create such a very soft and fudgy texture. I promise you, you CANNOT even taste them in the slightest. I refuse to eat desserts that taste like vegetables. Because then is it even a dessert at that point? The answer is clearly no. If you are going to enjoy a dessert, do it right!

Seriously, if you like pumpkin spice and Fall flavors, these gooey brownies are 100% for you!

Ingredients in healthy pumpkin pie brownies

You’ll only need a few, simple ingredients to get this easy recipe going! I am all about simplicity and ease, so don’t worry, you won’t need to go to the supermarket and buy a lot of expensive baking ingredients. You probably have most of these ingredients in your pantry already!

  • Wet Ingredients:
    • Canned chickpeas – These add so much protein to these brownies it is incredible! Transforms them into healthy protein brownies.
    • Almond butter
    • Maple syrup
    • Vanilla extract
  • Dry Ingredients
    • Coconut sugar
    • Almond flour
    • Baking powder
    • Baking Soda
    • Cacao Powder
    • Pumpkin spice
    • Salt
    • Chocolate chips

How to make healthy vegan pumpkin spice chickpea brownies

These delicious, fudgy pumpkin spice brownies are not only super nutritious, but they are also super easy to make. Think one bowl, easy cleanup, and no hassle!

To start, preheat your oven and lightly grease or line an 8” x 8” tin with parchment paper. I like to line and grease my pan by cutting a little piece of parchment paper, placing it into the bottom of the pan, and spraying it with nonstick spray. This will male it so easy to take your healthy pumpkin spice chocolate chip brownies out of the pan.

Next, using a colander, drain and rinse your can of chickpeas under COLD water for at least 30 seconds. Gently pat them dry and add them to the food processor.

Now, it is time to add the rest of the ingredients – excluding the chocolate chips – into a food processor. Blend the mixture until completely smooth. This should take about 45 seconds to 1 minute.

Once completely smooth and silky, remove the blade from the food processor and hand fold in your chocolate chips. Remember to save a few to sprinkle on top before baking!

Using a spatula, evenly spread the batter into the greased tin and sprinkle the rest of the chocolate chips on top.

Bake you delicious, gooey pumpkin spice blondies and let cool a little before serving.

How to store healthy pumpkin spice chickpea brownies?

These fudgy brownies honestly do not last more than a few days in my apartment! To be honest, they didn’t last more than 24 hours. However, for best results, store in a covered container for 3 -5 days at room temperature. You can even store in the fridge for up to 10 days!

Ingredients
 

  • 1 can chickpeas
  • 6 Tbsp almond butter *
  • 1/2 cup maple syrup
  • 2 tsp vanilla extract
  • 1/3 coconut sugar
  • 1/4 cup almond flour **
  • 1/4 cup 100% cacao powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions

  • Preheat your oven to 350F and lightly grease and line an 8” x 8” tin with parchment paper. 
  • Drain and rinse chickpeas under COLD water for at least 30 seconds. Gently pat dry.
  • Add chickpeas, almond butter, maple syrup, vanilla extract, coconut sugar, almond flour, cacao powder, baking soda, baking powder, pumpkin spice, and salt into a food processor. Blend until completely smooth. For about 45 seconds to 1 minute. 
  • Remove the blade and fold in the chocolate chips with a spatula.
  • Evenly spread the batter into the greased tin and sprinkle the rest of the chocolate chips on top.
  • Bake for 25-30 mins, or until a toothpick comes out clean.
  • Let cool before serving, and enjoy!

Notes

* You can use any nut butter.
** Can substitute other gluten-free flours for almond flour (1:1). Do not substitute with coconut flour.
