Toss the blueberries, coconut sugar, lemon juice, lemon zest, vanilla, and starch in a large mixing bowl.
Add them to a greased pie dish or baking dish.
In a separate bowl, mix together all the oat crumble topping ingredients.
Spread the oat crumble mixture evenly on top of the blueberries.
Bake for 40 – 48 minutes, until the top, is golden crisp and the blueberries are bubbly.
