Ingredients

3 large eggs ⅓ cup plain nonfat Greek yogurt ⅓ cup real maple syrup 3 lemons 2 tbsp milk 1 tsp vanilla extract ⅓ cup coconut oil 1 cup oat flour 1 cup white whole wheat flour baking powder baking soda fresh blackberries

Step 1

 whisk together the eggs, Greek yogurt, maple syrup, melted coconut oil, lemon juice, almond milk, and vanilla extract.

Using a spatula, gently fold in the oat flour, white whole wheat flour, baking powder, and baking soda.

gently fold in the lemon zest  and blackberries

Add to a greased and lined loaf pan.

Bake for 45 to 55 minutes, or until the bread is golden brown.
