1 + 1/4 cup rolled oats * 1/2 cup creamy peanut butter , unsalted * 3 Tbsp ground flaxseed 1 Tbsp chia seeds 1/4 tsp salt 1/3 cup 100% pure maple syrup or honey 1.5 tsp vanilla extract 1/4 cup peanuts , roughly chopped 1/4 cup mini chocolate chips
In a large bowl, mix all ingredients together.
Cover the mixing bowl and chill dough in refrigerator for 1 hour.
Using your hands, form 20 - 25 balls about 1 inch in size each.
Enjoy and store in sealed container in the refrigerator for 7 - 10 days or freeze for up to 3 months.
Use gluten-free or regular rolled oats.
Use salted or unsalted peanut butter. If salted, omit 1/4 tsp salt.
