Vegan Gingerbread Protein Blondies

1 15oz can of unsalted chickpeas, drained and rinsed 6 Tbsp creamy almond butter , unsalted ⅓ cup maple syrup 2 tsp vanilla extract ¼ cup coconut sugar * ¼ cup almond flour 2 tsp cinnamon 1 tsp allspice 1 tsp ground cloves 1/2 tsp ground ginger 3/4 tsp baking soda 1/4 tsp baking powder 1/8 tsp salt 1/3 cup chocolate chips
Preheat your oven to 350F and lightly grease and line an 8” x 8” tin with parchment paper.
Drain and rinse chickpeas under COLD water for at least 30 seconds. Gently pat dry.
Add all ingredients – excluding the chocolate chips – into a food processor. Blend until completely smooth. For about 45 seconds to 1 minute.
Remove the blade and fold in chocolate chips with a spatula. Save a few for the top!
Evenly spread the batter into the greased tin and sprinkle the rest of the chocolate chips on top.
Bake for 25-30 mins, or until a toothpick comes out clean.
