Healthy Birthday Cake Truffles

No-bake healthy birthday cake truffles that are soft, delicious, and perfect for any occasion! Made with simple ingredients like coconut flour, almond butter, maple syrup, and sprinkles these truffles are nutritious, gluten-free, and refined-sugar-free.

Instructions

  • Line a baking tray that will fit in your freezer with parchment paper.
  • In a large bowl, combine almond butter, maple syrup, vanilla extract, almond extract, and coconut flour. Mix with a spatula.
  • Fold in sprinkles.
  • Using your hands, roll 12- 14 balls and space them out on the baking tray. Chill in freezer for 10 - 15 minutes.
  • Meanwhile, add white chocolate and coconut oil into a microwave-safe bowl. Microwave for 30 seconds. Stir. Microwave again for 20 seconds. Stir. Continue this process until your chocolate is completely melted.
  • Once truffles are ready, dunk each one into white chocolate. Fish out using two forks or spoons and place them on lined baking sheet. Top wth sprinkles and freeze for additional 20 minutes.
  • Enjoy and store in the fridge!

Notes

* You can substitute any nut butter (or sunflower butter) for the almond butter.
* Use regular or vegan chocolate!
