Grain-free sweet potato peanut butter blondies that are healthy, vegan, and gluten-free! These gooey and fudgy blondies call for 9 simple ingredients and are super easy to make. The perfect healthy treat.

mashed sweet potato
,
1-2 medium sweet potatoes
½
cup
creamy peanut butter
⅓
cup
100% maple syrup
1
tsp
vanilla extract
½
tsp
cinnamon
2
Tbsp
coconut flour
½
tsp
baking powder
¼
tsp
salt
½
cup
chocolate chips
Instructions
Preheat oven to 350F and lightly grease and line an 8” x 8” tin with parchment paper.
Bring a pot of water to a boil on the stovetop.
Peel, cut sweet potatoes in quarters, and add to boiling water. Cook for 10 - 12 minutes or until fork tender.
Meanwhile, in a large mixing bowl, combine peanut butter, maple syrup, vanilla extract, and cinnamon.
Remove sweet potatoes from boiling water, drain, and mash with a fork. Mesure 1 cup and combine with mixing bowl with peanut butter.
Add in coconut flour, baking powder, and salt.
Hand fold in chocolate chips with spatula; saving a few to sprinkle on top.
Evenly spread the batter into the greased tin. Sprinkle some chocolate chips on top.
Bake for 30 – 35 minutes, or until a toothpick comes out clean.
Let cool before serving, and enjoy!
Notes
Can substitute maple syrup with your favorite liquid sweeter.
