Healthier Gooey Cookie Skillet
A gooey and warm healthier chocolate chip cookie skillet is a classic dessert that everyone loves. ½ cup all-natural creamy almond butter ¼ cup melted unrefined coconut oil , or butter 1 large egg ½ cup real maple syrup ¼ cup coconut sugar 2 tsp vanilla extract 1 cup white whole wheat flour ¾ tsp baking soda ⅔ cups chocolate chips or chunks
Preheat your oven to 350°F.
In a large mixing bowl, beat together the creamy almond butter and melted coconut oil with a whisk.
Add in the egg, maple syrup, coconut sugar, and vanilla extract. Mix until combined.
Add in the flour and baking soda and mix until combined. Then hand fold in the chocolate chips.
Press the cookie dough into an 8’’ or 9’’ cast iron skillet. Press extra chocolate chips on top if desired.
Bake for 18 - 22 minutes, until it is barely golden. Don’t overbake it! It will continue to cook slightly as it cools.
Serve warm with vanilla ice cream, and enjoy!
