Air Fryer Sweet Potato Cubes

The best crispy and tender air fryer sweet potato cubes ready in under 15 minutes. Coated in a delightful blend of garlic, paprika, salt, and pepper, they're a healthy addition to salads, bowls, or as a tasty dinner side!

Ingredients
 

  • 2 medium sweet potatoes, peeled
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Instructions

  • Preheat air fryer to 400°F and lightly grease with avocado, olive oil, non-stick spray.
  • Meanwhile, prepare your sweet potatoes by carefully peeling and cutting them into 1-inch bite-sized pieces. If you prefer to keep the skin on, you can. 
  • Add to a large mixing bowl with olive oil and seasonings. Mix until they are fully coated.
  • Once the air fryer is heated, add sweet potato cubes in and cook for 10 - 12 minutes, until tender and slightly crispy. Remember to shake the basket halfway through.

  • Remove from the air fryer and enjoy!

Notes

Garlic Powder: Do not use minced garlic instead of garlic powder. You can use onion powder if needed.
Storing Leftovers: Store leftovers in an air-tight container in the refrigerator for up to 5 days.
Reheating Leftovers: To reheat in the microwave, place sweet potato cubes in a microwave-safe dish and heat for 30 - 75 seconds until warm. To reheat in the air fryer, place them in a preheated air fryer for 2 - 4 minutes at 350°F.
