This super fresh Greek spinach salad is dressed in a light homemade vinaigrette and topped with feta, tomatoes, bell pepper, onion, and cucumber. A fun and healthy twist on a classic!
1medium English cucumber, sliced into quarter-moons
1yellow or orange bell pepper, seeded and chopped
½cupkalamata olives, sliced
4ouncesfeta cheese, cut into 1/2 inch cubes or crumbled
Vinaigrette:
3Tbspextra-virgin olive oil
1large lemon, juiced
2Tbspred wine vinegar
1tspdijon mustard
2garlic cloves, minced
1tspdried oregano
½tspsalt
½tspblack pepper
Instructions
Make the dressing by whisking together ingredients in a small bowl or mason jar. Taste and adjust seasoning to your liking by adding more lemon juice, salt, pepper, and/or olive oil, if desired. Place in the refrigerator until ready to use.
Add spinach to a large salad bowl and layer on the sliced red onion, tomatoes, cucumber, bell pepper, olives, and feta cheese.
When ready to serve, drizzle dressing on the salad and gently toss to combine.
This salad is best enjoyed within 10 minutes of dressing.
