Bison Burgers Recipe

These Greek bison burgers are juicy, packed with feta, and easy to make in just 15 minutes. Whether you grill, sear, or air fry them, these burgers always turn out delicious. Ground bison is protein-rich and leaner than ground beef!

Ingredients
 

  • 1 lb lean ground bison meat
  • 1 tbsp Dijon mustard
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt, or more to taste
  • ½ tsp ground pepper
  • ½ cup crumbled feta cheese
  • Optional: 1 cup baby spinach, finely chopped
  • Toppings: butter lettuce leaves, red onion, toasted buns, tomato, ketchup, or mustard

Instructions

  • In a large bowl, mix together ground bison meat, Dijon mustard, dried oregano, garlic powder, paprika, salt, pepper, and crumbled feta cheese. If desired, add finely chopped baby spinach.

  • Form the mixture into 4 equal-sized patties, about ½ inch thick.
  • Preheat a skillet or grill pan over medium heat, or preheat your grill to medium-high (375°F to 400°F). Grease the grill by using spray or dipped paper towels in oil.
  • Cook the burgers for 2 - 4 minutes on each side for a medium-well doneness. Adjust the cooking time according to your preferred level of doneness.

  • Air Fryer: You can air-fry bison burgers. Preheat your air fryer to 370°F (187°C), then cook the burgers for about 5 minutes on one side. Flip them and cook for an additional 2-3 minutes until they reach your desired level of doneness.
  • Once cooked, assemble your burgers with your favorite toppings and buns. Consider buttery toasted buns or sourdough buns and top with lettuce, tomato, red onion, and your favorite condiments. Serve with a side of Greek salad. Enjoy!

Notes

No Overmixing: Don’t overmix the bison burger mixture to avoid a dense texture.
Burger Temperature: Use a meat thermometer to ensure the burgers reach the desired level of doneness. Aim for an internal temperature of 140 and 145 degrees F for medium burgers.
Ground Bison Substitute: You can substitute ground beef, turkey, or chicken for the ground bison if needed.
Feta Cheese: If you’re out of feta cheese, try using crumbled goat cheese, blue cheese, or shredded cheddar cheese as alternatives.
Garlic Powder: You can minced 2 large cloves of garlic instead.
Freezing: Wrap the cooked burgers individually in plastic wrap or aluminum foil and place them in an airtight container or freezer bag. They can be stored in the freezer for up to 3-4 months.
Storing: To store bison burgers, cool them completely before placing them in an airtight container or wrapping them tightly in foil or plastic wrap. Refrigerate for up to 3-4 days.
Reheating: To reheat bison burgers, microwave them on a microwave-safe plate covered with a damp paper towel for 30-60 seconds, or heat them in a preheated oven at 350°F (175°C) for about 10 minutes, or until warmed through. Alternatively, heat them in a skillet over medium heat for 3-4 minutes on each side.
