Healthy Apple Pie Muffins

Healthy apple pie muffins that are fluffy, moist, and incredibly tasty. These gluten-free, refined sugar-free, and kid-friendly muffins are made with simple ingredients and sweetened naturally with maple syrup.

Ingredients
 

  • 1 egg
  • 1 cup unsweetened apple sauce
  • 2 tsp vanilla extract
  • 1/4 cup maple syrup
  • 2 Tbsp 0% greek yogurt
  • 1/2 Tbsp melted coconut oil
  • 3 tsp cinnamon
  • 1 cup almond flour
  • 1 cup + 2 Tbsp oat flour *, see notes
  • 1/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1 - 2 Tbsp rolled oats

Instructions

  • Preheat your oven to 350F and line a cupcake tin with baking cups. 
  • In a large bowl, whisk the egg. 
  • Add in the apple sauce, vanilla extract, maple syrup, yogurt, melted coconut oil, and cinnamon. Fully combine.
  • In a separate small bowl, whisk together the almond flour, oat flour, baking powder, and baking soda. Once fully combined, add into the larger bowl with wet ingredients.
  • Fill baking cups with muffin mixture and sprinkle some rolled oats on top of all muffins.
  • Bake for 20-25 minutes, or until a toothpick comes out clean. 
  • Let cool before serving, and enjoy!

Notes

* MAKE YOUR OWN OAT FLOUR: simply blend your favorite brand of rolled oats in the blender for around 20 to 30 seconds until smooth. It should be a “flour” consistency.
