Best Ever Peanut Butter Energy Balls

Best ever peanut butter energy balls that are healthy, vegan, gluten-free, and dairy-free! This easy no-bake recipe is the perfect healthy snack, breakfast, or even late-night treat.

Ingredients
 

  • 1 + 1/4 cup rolled oats *
  • 1/2 cup creamy peanut butter, unsalted *
  • 3 Tbsp ground flaxseed
  • 1 Tbsp chia seeds
  • 1/4 tsp salt
  • 1/3 cup 100% pure maple syrup or honey
  • 1.5 tsp vanilla extract
  • 1/4 cup peanuts, roughly chopped
  • 1/4 cup mini chocolate chips

Instructions

  • In a large bowl, mix all ingredients together.
  • Cover the mixing bowl and chill dough in refrigerator for 1 hour.
  • Using your hands, form 20 - 25 balls about 1 inch in size each.
  • Enjoy and store in sealed container in the refrigerator for 7 - 10 days or freeze for up to 3 months.

Notes

Use gluten-free or regular rolled oats.
Use salted or unsalted peanut butter. If salted, omit 1/4 tsp salt.
