Healthy Peanut Butter Chocolate Chip Banana Bread

Best ever healthy peanut butter chocolate chip banana bread that is fluffy, moist, gluten-free, and dairy-free! Easy snack, breakfast, or even late-night treat that is naturally sweetened with maple syrup.

Ingredients
 

  • 2 over-ripe medium bananas, mashed
  • 6 Tbsp salted creamy peanut butter
  • ¼ cup 100% pure maple syrup
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • 2 cups + 1 Tbsp almond flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 ¼ tsp cinnamon
  • cup chocolate chips

Topping:

  • 2 Tbsp chopped peanuts

Instructions

  • Preheat oven to 350F and line and grease a bread tin with parchment paper.
  • In a large mixing bowl, combine mashed bananas, salted creamy peanut butter, maple syrup, whisked eggs, and vanilla extract.
  • Add in almond flour, baking powder, baking soda, and cinnamon. Mix until completely combined.
  • Hand fold in chocolate chips and pour batter into greased bread tin.
  • Sprinkle chopped peanuts and extra chocolate chips on top.
  • Bake for 45 - 50 minutes, or until toothpick comes out clean. 
  • Let cool & enjoy! Store in sealed container at room temperature up to 4 days or refrigerate for up to 10 days.

Notes

Do not substitute the almond flour in the recipe for another type.
Can substitute unsalted peanut butter for salted peanut butter, just add 1/4 tsp salt.
