Preheat oven to 350F and line baking sheet with parchment paper.
In a large mixing bowl, whisk egg.
Add unsweetened applesauce, vanilla extract, melted coconut oil, coconut sugar, cinnamon, and salt. Mix with spatula until fully combined.
Add in rolled oats, almond flour, and baking soda. Mix with spatula until fully combined. Then, fold in chocolate chips and walnuts.
Using your hands, form 18 – 22 balls and evenly space them across the lined baking tray. Gently press down to form a cookie shape.
Bake for 10 – 12 minutes, until golden brown. Let cool.
