Healthy Oatmeal Chocolate Chip Walnut Cookies

Ingredients
 

  • 1 egg, room temp
  • ½ cup unsweetened applesauce
  • 2 tsp vanilla extract
  • 3 Tbsp coconut oil, melted
  • ½ cup coconut sugar
  • ¼ tsp ground cinnamon
  • ¼ teaspoon salt
  • 2 cups rolled oats, gluten-free or regular
  • 1 cup almond flour *
  • ½ teaspoon baking soda
  • ½ cup chocolate chips
  • cup walnuts, chopped

Instructions

  • Preheat oven to 350F and line baking sheet with parchment paper.
  • In a large mixing bowl, whisk egg.
  • Add unsweetened applesauce, vanilla extract, melted coconut oil, coconut sugar, cinnamon, and salt. Mix with spatula until fully combined.
  • Add in rolled oats, almond flour, and baking soda. Mix with spatula until fully combined. Then, fold in chocolate chips and walnuts. 
  • Using your hands, form 18 – 22 balls and evenly space them across the lined baking tray. Gently press down to form a cookie shape.
  • Bake for 10 – 12 minutes, until golden brown. Let cool. 

Notes

Can substitute almond flour with gluten-free flour.
Can substitute unsweetened apple sauce with sweetened apple sauce.
Can substitute coconut sugar with light brown sugar.
Can substitute walnuts with any type of nut.
