Remove crust from each slice of bread and roll each slice out with a rolling pin. See step-by-step tutorial above.
On one short end of the slice, spread 1-inch strip of about 1/2 to 1 Tablespoon of peanut butter. Top with a sprinkle of diced strawberries (or other fruit). On oppotise short end of slice, spread a tiny amount of peanut to seal the roll-up. Roll the bread up tightly and repeat with the remaining pieces of bread.
In a shallow bowl, whisk together eggs, almond milk, maple syrup, vanilla extract, and cinnamon.
Heat a pan to medium heat and melt a tablespoon of butter or use cooking spray.
Dip each roll-up in egg mixture, coat well, and then place into pan seam side down. Allow roll-ups to cook for 2 minutes per side until golden brown and slightly crisp on the outside. Keep turning until golden on all sides.
Top with more fresh fruit and serve immediately with maple syrup.
