Healthy Peanut Butter & Fruit French Toast Roll-Ups

Healthy peanut butter and fruit french toast roll ups for a perfect breakfast or brunch! Gooey, easy, ready in 15-minutes, with a perfect crunch.

Ingredients
 

  • 6 slices of bread
  • 2 eggs
  • cup almond milk
  • 1 Tbsp 100% maple syrup
  • ½ tsp vanilla extract
  • 1 tsp ground cinnamon
  • 4 - 6 Tbsp creamy peanut butter
  • 3 - 5 strawberries, diced

Instructions

  • Remove crust from each slice of bread and roll each slice out with a rolling pin. See step-by-step tutorial above.
  • On one short end of the slice, spread 1-inch strip of about 1/2 to 1 Tablespoon of peanut butter. Top with a sprinkle of diced strawberries (or other fruit). On oppotise short end of slice, spread a tiny amount of peanut to seal the roll-up. Roll the bread up tightly and repeat with the remaining pieces of bread.
  • In a shallow bowl, whisk together eggs, almond milk, maple syrup, vanilla extract, and cinnamon.
  • Heat a pan to medium heat and melt a tablespoon of butter or use cooking spray.
  • Dip each roll-up in egg mixture, coat well, and then place into pan seam side down. Allow roll-ups to cook for 2 minutes per side until golden brown and slightly crisp on the outside. Keep turning until golden on all sides.
  • Top with more fresh fruit and serve immediately with maple syrup.
  • Enjoy!

Notes

Can use any type of milk.
Can substitute almond butter, cashew butter, sun butter.
Can substitute maple syrup with honey or liquid sweetener.
