In a large pot or Dutch oven, heat olive oil over medium-high heat. Sauté the veggies for about 5 minutes until the onions are soft.
Stir in the minced garlic and sauté for 1 more minute until fragrant.
Add the rotisserie chicken, canned tomatoes, spices, broth, and other ingredients. Let the soup simmer for 20 minutes.
Cut tortillas into thin strips.
In a mixing bowl, toss the strips in the olive oil and salt.
