In a large bowl, combine the peanut butter, maple syrup, vanilla extract, and coconut flour.
Mix until combined.
Using your hands, roll around 12 golf-ball-sized truffles and place them in the freezer for 20 minutes.
When the balls are done chilling, dunk each one into the chocolate.
Decorate with an extra chocolate drizzle, crushed peanuts, and/or some coarse sea salt.
