6 ounces brown rice noodles 2 medium chicken breasts 1 large red bell pepper 3 large garlic cloves 3 – 4 large eggs 1 cup fresh bean sprouts 3 green onions (scallions) ⅓ cup fresh cilantro, ¼ cup tamari 2 tbsp fish sauce 2 tbsp rice vinegar 1 – 2 tbsp honey Limes, for serving

Step 1

Cut the chicken. Cut the two boneless and skinless chicken breasts into thin strips.

Cook the chicken. Heat a large saute pan with olive oil to medium-high. Then add in the chicken and cook for 3 – 4 minutes.

Cook the bell peppers. Add bell peppers and cook for 3 – 5 minutes until softened. In the last minute, add minced garlic & carrots.

Step 4

Add chicken & eggs. Push the bell peppers to the side and crack the eggs into the pan. Scrambled eggs into smaller pieces as they cook.

Step 5

Add noodles. Add in the cooked noodles, bean sprouts, green onion, fresh cilantro, and sauce.

Add sauce. Gently toss to combine so that the noodle absorb the sauce and everything is warm.
