Cube the butternut squash, drizzle with olive oil (about 1 tbsp), and lightly season with salt and pepper. wrap the shallots and galric in foil.
Roast everything until the squash is caramelized and tender.
In a blender, combine the roasted squash, shallots, garlic, with the rest of the ingredients.
Blend until creamy and adjust thickness with reserved pasta water or extra vegetable broth.
Pour sauce over pasta in the pot and stir. Heat over medium for 2-3 minutes until it is warm.
Serve with fried sage & pancetta!
