1 + 1/4 cup rolled oats , gluten-free or regular 2 Tbsp ground flaxseed 1 Tbsp chia seeds , optional ¼ tsp salt ½ cup creamy peanut butter ⅓ cup honey * 1 ½ tsp vanilla extract ¼ cup peanuts , roughly chopped ¼ cup mini chocolate chips , I use Lily's Dark Chocoalte Chips ¼ cup dried cranberries , sweetened
In a large bowl, mix all ingredients together.
Cover the mixing bowl and chill in the refrigerator for 20 minutes.
Using your hands, form 20 – 25 balls, about 1 inch in size each.
Enjoy and store in a sealed container in the refrigerator for 7 – 10 days or freeze for up to 3 months.
Can substitute honey with maple syrup.
Can substitute peanuts for any type of nut.
Can substitute dried cranberries for raisins.
