This single-serve air fryer apple crisp is gooey cinnamon apples under a golden oat crumble, ready in about 25 minutes. The apples cook on their own first, which is what gets the topping genuinely crisp. Gluten-free, refined sugar-free, and 7 grams of fiber.
1tablespoonchopped nuts, pecans or walnuts work great (optional)
Instructions
Preheat: Heat your air fryer to 360°F (182°C).
Mix the filling: In a small bowl, toss the chopped apple with maple syrup, cinnamon, ginger, cornstarch, and vanilla until well coated.
Cook the apples: Spoon the apples into a single-serve ramekin (8 to 10 oz). It's fine if it's slightly overfilled, the apples will shrink as they cook. Place the ramekin in the air fryer and cook for 10 to 12 minutes, until the apples start to soften.
Make the topping: While the apples cook, combine the melted butter, coconut sugar, oats, oat flour, cinnamon, and nuts in the same bowl. Mix until it resembles wet sand.
Add topping: Carefully remove the ramekin from the air fryer and sprinkle the crisp topping evenly over the apples.
Finish cooking: Return to the air fryer and cook for another 8 to 10 minutes, until the topping is deep golden and the apples are bubbling at the edges.
Cool and serve: Let cool for a few minutes, it will be very hot. Enjoy warm, straight from the ramekin, with a scoop of vanilla ice cream or Greek yogurt.
Notes
Ramekin size: Use an 8 to 10 oz ramekin (1 to 1 ¼ cups capacity). Fill it right to the top, the apples shrink as they cook.Best served fresh: The topping is crispiest right after cooking.Make it without oats: Replace the rolled oats and oat flour with 3 ½ tablespoon fine almond flour. If the topping looks dry, add an extra ½ teaspoon melted coconut oil.Nutrition: Calculated without the optional nuts. Adding 1 tablespoon chopped walnuts brings it to about 470 calories.
