Instructions
Preheat: Heat your air fryer to 360°F (182°C).
Mix the filling: In a small bowl, toss the chopped apple with maple syrup, cinnamon, ginger, cornstarch, and vanilla until well coated.
Cook apples: Spoon the apples into a single-serve ramekin (8–10 oz). It’s fine if it’s slightly overfilled—the apples will shrink as they cook. Place ramekin in the air fryer and cook for 10–12 minutes, until the apples start to soften.
Make the topping: While the apples cook, combine the melted butter, coconut sugar, oats, oat flour, cinnamon, and nuts in the same bowl. Mix until it resembles wet sand.
Add topping: Carefully remove the ramekin from the air fryer and sprinkle the crisp topping evenly over the apples.
Finish baking: Return to the air fryer and cook for another 8–10 minutes, until the topping is golden brown and crisp.
Cool & serve: Let cool for 5–10 minutes (it will be very hot). Enjoy warm, straight from the ramekin, with a scoop of vanilla ice cream or Greek yogurt if you’d like.
