BLT Chicken Salad

cubed or shredded (I like rotisarri chicken)

cooked bacon

crumbled (save some for topping)

celery rib

diced

grape tomatoes

halved or quartered
2 - 3
green onions

thinly sliced (save some for garnish)
⅓

mayo
,
regular or avocado (* you can substitute with plain Greek yogurt for a lighter option)
Butter or iceberg lettuce cups for serving
Instructions
In a large bowl, add the chicken, crumbled bacon, celery, tomatoes, green onions and mayo.
Mix until everything is evenly coated. Taste and season with salt and pepper if needed.
Scoop the chicken salad into lettuce cups.
Top with extra bacon and green onions, and enjoy!
