These healthy banana bread donuts are baked, not fried, and made with almond flour, so they're naturally gluten-free and refined sugar-free. Soft, fluffy, and ready in about 30 minutes. Add the sweet coconut sugar glaze or enjoy them plain.
3tablespoonmilk, any kind (oat, almond or cow's milk)
Instructions
Preheat the oven. Heat to 350°F and grease two 6-cavity donut pans with cooking spray or butter.
Mash the bananas. Mash in a large bowl until completely smooth, with no chunks. You should have about 1 cup.
Add the wet ingredients: Whisk in the egg, almond butter, melted coconut oil, maple syrup, and vanilla until combined.
Add the dry ingredients: Fold in the almond flour, cinnamon, baking powder, and salt until just combined. Don't overmix.
Fill the pans: Spoon the batter evenly into the greased cavities, filling each about three-quarters full. This makes about 12 donuts, so you'll need both pans.
Bake: 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Let the donuts cool completely before glazing.
Make the glaze (optional): Blend the coconut sugar in a high-speed blender until powdered. Whisk it with the milk until smooth and thick.
Glaze the donuts: Dip the tops of the cooled donuts into the glaze, then set them on a wire rack.
Notes
Measure your banana: Two large bananas should give you about 1 cup mashed. Too much banana is what makes these come out wet.Almond flour: Use blanched superfine almond flour, not almond meal, and don't swap in coconut flour. It absorbs far more liquid and isn't a 1:1 substitute.Maple syrup: Honey works as a straight swap. One reader tried it with great results.Coconut oil: Butter or vegan butter work if you don't need these dairy free.No donut pan: Use a muffin tin with a small ball of foil pressed into the center of each cup to form the hole, or bake them as donut holes in a mini muffin tin without foil.Muffins: Bake in a greased muffin tin for 18 to 22 minutes, until a toothpick comes out clean.Add-ins: Chocolate chips, walnuts, or chia seeds all stir in fine.Cool completely before glazing. Warm donuts melt the glaze right off.Nutrition is for unglazed donuts. With the coconut sugar glaze, add roughly 30 calories per donut.
