This healthy coleslaw is creamy without the half cup of mayo, at 69 calories per serving. Greek yogurt does the work, Dijon and celery seed bring the classic flavor, and the cabbage stays crisp instead of going soggy. Ready in 10 minutes.
1tablespoonmayonnaise, (adds flavor, but you can leave it off)
½tablespoonDijon mustard
1½tablespoonsapple cider vinegar
2teaspoonshoney, OR maple syrup or cane sugar
½teaspoonSalt, or to taste
Instructions
Make the dressing: In a small bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and black pepper until smooth and creamy.
Combine the coleslaw: Add the green cabbage, red cabbage, carrots, red onion, and celery seed to a large mixing bowl.
Toss: Pour the dressing over the vegetables and toss until everything is evenly coated.
Chill: For the best flavor, refrigerate for at least 20–30 minutes before serving. Toss again, taste, and add more salt if needed.
Notes
Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. The slaw softens and releases liquid as it sits, so pour off any water at the bottom and toss again before serving.Make ahead: Store the dressing and the shredded vegetables separately, then toss together 30 minutes before serving. The dressing keeps up to 5 days, the shredded vegetables up to 3.Freezing: Not recommended. Cabbage turns mushy when thawed and the yogurt dressing separates.Without mayo: Leave it out and add an extra tablespoon of Greek yogurt. The slaw still works, it just tastes a little more tangy and a little less like classic deli slaw.Bagged coleslaw mix: Swap the cabbage and carrots for a 14 to 16 ounce bag if you want to skip the shredding.Taste after chilling: Cold dulls flavor. What tasted balanced when you mixed it will usually need a little more salt or a splash of vinegar after 30 minutes in the fridge.
