Ingredients

½
cup
Greek yogurt
,
I like 2%, but 0% and 5% work too
1
large egg
¼
cup
+ 1 tablespoon oat flour
,
(you can use all-purpose flour, too, but I prefer oat because it has more protein and fiber.)
1
scoop
whey protein powder
,
~28g, vanilla, chocolate, or your preferred flavor (you can use Pea Protein too)
¼
cup
milk of choice
,
cow’s, almond, oat, or cashew
1
teaspoon
baking powder
¼
teaspoon
salt
Toppings: fresh or frozen berries
,
banana slices, chocolate chips, yogurt, or maple syrup
Instructions
Oven Method
Preheat oven to 350°F.
Grease a small baking dish. Add all ingredients and whisk together.
Bake for 15–20 minutes, until the edges are golden and the center is set.
Top with yogurt and berries and enjoy!
Microwave Method
Grease a large microwave-safe bowl. Add all ingredients and whisk together.
Microwave on high for 2–3 minutes. Check at the 2-minute mark — it's done when the center is no longer jiggly.
Top with yogurt and berries and enjoy!
