Avocado oil spray, or another high-smoke-point oil for greasing the air fryer basket
Instructions
Season the steaks. Pat the filets dry, then generously season all sides with salt and black pepper. Let them sit at room temperature for 10–20 minutes so they aren’t ice-cold going into the air fryer — this helps them cook more evenly.
Preheat the air fryer. Heat your air fryer to 400°F and lightly grease the basket with avocado oil spray.
Air fry. Place the filets in the basket and cook for 10–15 minutes, flipping halfway if you want, until the internal temperature reaches 135°F for medium-rare (or cook longer to your liking).
Make (optional) Garlic Butter: In a small bowl, mix 2 tablespoons softened butter, ½ teaspoon garlic powder (or 1 small minced clove), and a pinch of salt. Spoon over the steaks right after resting so it melts on top.
Rest + serve. Let the steaks rest for 5 minutes before slicing so all the juices stay in.
Notes
Steak size matters: This recipe works best with filet mignon steaks that are about 5–6 oz and 1–1½ inches thick. Thicker steaks may need a little extra time.Use a thermometer: Filet mignon cooks quickly, so checking the internal temperature is the most reliable way to avoid overcooking.Let the steak rest: Resting for 5 minutes before slicing helps keep the steak tender and juicy.Don’t overcrowd the basket: Make sure the steaks aren’t overlapping so they cook evenly. Cook in batches if needed.Season simply: Filet mignon doesn’t need much — salt and pepper are enough to let the flavor shine.Optional toppings: Finish with garlic butter for a richer feel or chimichurri for something fresh and herby.
