These easy maple roasted acorn squash slices are brushed with warm maple syrup, olive oil, garlic, and a touch of cinnamon until perfectly caramelized. They’re sweet, savory, and buttery-tender — a healthy fall side that’s perfect for weeknights, holidays, or meal prep. They always disappear fast!
Preheat the oven: Set to 400°F and line a baking sheet with parchment paper.
Prep the squash: Slice the acorn squash in half and scoop out the seeds with a spoon. Look at the process shots in the blog post above if you have questions!
Cut into slices: Place the halves cut-side down on a cutting board and slice into ¼-inch thick pieces.
Make the glaze: In a small bowl, whisk together olive oil, maple syrup, garlic, black pepper, cinnamon, and a pinch of salt.
Coat the squash: Arrange the slices in a single layer on the prepared baking sheet and brush or toss with the maple mixture until evenly coated.
Roast: Bake for 40–50 minutes, flipping halfway through, until tender and the edges are caramelized.
