These easy air fryer egg bites are my better-than-Starbucks copycat, made moist and fluffy with cottage cheese. They pack 6 grams of protein and only 59 calories each and are perfect for meal prep. Customize them with any mix-ins for a high-protein breakfast or snack in under 15 minutes.
Add the eggs: Pour the egg mixture into each cup, filling each about ¾ full. Use your finger or a spoon to swirl each one so the mix-ins are evenly distributed.
Air fry: Cook at 290°F for 12 to 15 minutes, until the eggs are puffed up and set.
Serve or store: Enjoy warm, or cool and store for meal prep (see notes).
