I call them Starbucks copycats, but they are better than the Starbucks version: healthier, made with simple ingredients, and moister thanks to one trick I'll get to below.
The secret is blended cottage cheese, which keeps these egg bites soft and custardy instead of dry and rubbery. The same trick works in my cheesy scrambled eggs with cottage cheese and air fryer frittata if you'd rather make one big batch.

- Don't skip the cottage cheese: It's what keeps the bites moist and custardy. Blended smoothly, it holds moisture as the eggs cook, so they never turn rubbery.
- Keep the temperature low: Air fry at 290°F. Higher heat cooks the outside too fast and dries out the centers before they set.
- Don't overcook them: Pull the bites as soon as the centers are puffed and set. They firm up a little more as they cool, so a few minutes too long is what makes them tough.

Hi Ay! Yes, you can prep the egg and cottage cheese mixture ahead and keep it in the fridge for up to a day before cooking. Give it a quick stir or re-blend before pouring, since it can separate a little as it sits. Are they any tips or tricks for getting this to work out? I followed all the instructions and used a silicone muffin pan but they didn’t seem to want to fully cook through in my air fryer. I tried the air fry and the bake functions and neither one fully cooked them.
