Not only are they perfectly and naturally sweetened with maple syrup and a dash of coconut sugar, but they also have the perfect texture crunch from the chocolate chunks and sea salt. Honestly, you could find these cookies in a bakery!

I have to admit, my love runs deep for these amazing chocolate chip cookies. I mean, not only are they paleo, gluten-free, and dairy-free, but each bite takes me back to my childhood when my mom used to bake a fresh batch of classic chocolate chip cookies after school on Fridays. Nothing, I repeat nothing, was better than those cookies.

How to Make the Best Ever Soft Paleo Chocolate Chip Cookies

This recipe is so simple and really easy to make. You’ll be in and out of the kitchen in less than 35 minutes! And all you need is baking sheet, parchment paper, a mixing bowl, and an oven.

Here, I’ll walk you through the steps to make these delicious, healthy soft chocolate chip cookies!

First, preheat your oven to 350F and line a baking tray with parchment paper.

In a large bowl, whisk egg. Then add in almond butter, maple syrup, vanilla extract, melted coconut oil, coconut sugar, and baking soda.. Mix with a spatula until fully combined.

Now, add in almond flour and salt, Again, mix with a spatula until fully combined. Next, hand fold in your dairy-free chocolate chips (I used Whole Foods Brands)! You can also add in some nuts like walnuts, peanuts, or pecans if you want, and even some dried fruit! Totally optional and customizable.

Now its time to chill the dough. Place mixing bowl in the refrigerator for 15 minutes!

When your dough is ready, slightly wet your hands and form 16 – 20 balls (about 1.5 Tablespoons of dough) and evenly space them across the lined baking tray. Gently press down to form a cookie shape.

Bake and enjoy your delicious low-carb paleo chocolate chip cookies!

I highly recommend storing them in an airtight container at room temperature for 5 -6 days!

  • 1/3 cup creamy almond butter, unsalted
  • 1/3 cup 100% pure maple syrup
  • 1.5 tsp vanilla extract
  • 1 Tbsp coconut oil, melted
  • 1/4 cup coconut sugar
  • 1/2 tsp baking soda
  • 1.5 cup + 1 Tbsp almond flour
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine whisked egg, almond butter, maple syrup, vanilla extract, melted coconut oil, coconut sugar, and baking soda.
  3. Add in almond flour and salt. Fold in chocolate chips with spatula.
  4. Place mixing bowl in the refrigerator for 15 minutes to chill the dough.
  5. Slightly wet hands, roll 16 – 20 dough balls, and evenly space across the lined baking tray. Gently press down to form a cookie shape.
  6. Bake for 11 – 13 minutes, until a light golden brown.
  7. Let cool & enjoy!

Notes

Can substitute unsalted creamy almond butter for salted creamy almond butter, but omit 1/4 tsp salt.

Can substitute coconut sugar with light brown sugar.

Can substitute almond flour with gluten-free flour 1:1.
