Why These Are My Go-To Healthy Blondies
These chickpea blondies were my favorite dessert when I was rowing at Harvard. Between practice and classes, I wanted something that felt like a real treat but still had some protein, and these checked both boxes. Chickpeas worked so well that I used them again in my fudgy chickpea brownies.
They were one of the first recipes I posted on Healthful Blondie, and I've made them a lot since. Two steps matter most: pat the chickpeas dry before blending, and let the blondies cool for 30 minutes before cutting. If you like this idea, my sweet potato blondies work the same way.
I've also added step-by-step photos and recalculated the nutrition so every number is accurate. And if you're mostly here for the batter, my high-protein edible cookie dough is made to be eaten with a spoon.

This was such a foolproof recipe, and the results were 10/10! … The inside texture is super fudgy and everything you're looking for in a 'healthy' blondie.

Are Chickpea Blondies Actually Healthy?
They're still dessert, but they're a much better one. Swapping the butter, eggs, and wheat flour for chickpeas and peanut butter gives each blondie 9g of protein and 5g of fiber, with less sugar than a classic blondie.
| Per blondie | Chickpea Blondies | Classic Blondies |
|---|---|---|
| Protein | 9g | About 3g |
| Fiber | 5g | Less than 1g |
| Sugar | About 14g | About 28g |
They're also gluten-free, dairy-free, and egg-free, so they're easy to share with just about anyone.
Ingredients You'll Need
You only need 10 simple ingredients for these healthy chickpea blondies, and most of them are probably already in your pantry.

- Chickpeas: Also called garbanzo beans, they're the secret to these super fudgy blondies. Rinse them and pat them dry before blending so the blondies aren't gummy. I promise you won't taste them.
- Peanut Butter: Use creamy, all-natural peanut butter. Crunchy works too, since everything gets blended.
- Maple Syrup: Sweetens the blondies naturally and keeps them moist. Honey works too, but then they won't be vegan.
- Coconut Sugar: Adds sweetness and gives the blondies their chewy texture. Brown sugar works just as well.
- Almond Flour: I've made these with both almond and oat flour, and almond flour gives them the softest, fudgiest texture. Use blanched almond flour, not almond meal. It's the same flour I use in my peanut butter almond flour cookies.
- Vanilla Extract: A little goes a long way for flavor.
- Baking Soda and Baking Powder: A bit of each helps the blondies rise.
- Salt: Brings out the peanut butter flavor. Skip it if your chickpeas are salted.
- Chocolate Chips: Use dairy-free chips to keep them vegan, or swap in chopped walnuts.

How to Make Chickpea Blondies (Step-by-Step)
You make these chickpea blondies in one food processor. Blend the batter until smooth, fold in chocolate chips, and bake for 20 to 25 minutes. The whole process takes about 5 minutes of hands-on time.

- Step 1: Blend everything but the chocolate chips. Add the rinsed and dried chickpeas, peanut butter, maple syrup, coconut sugar, almond flour, vanilla, baking soda, baking powder, and salt to a food processor.

- Step 2: Blend until smooth. Blend for 30 to 45 seconds, scraping down the sides as needed, until no chickpea pieces remain. Remove the blade and fold in ½ cup of chocolate chips.

- Step 3: Add to the pan. Spread the batter into a lined 8x8-inch pan and sprinkle the remaining chocolate chips on top.

- Step 4: Bake and cool. Bake at 350°F for 20 to 25 minutes, until a toothpick in the center comes out clean. Let them cool for 30 minutes before cutting.

How to Tell When Chickpea Blondies Are Done
After 20 to 25 minutes at 350°F, they're done when the edges are lightly golden, and a toothpick in the center comes out clean. They'll still feel soft, but they firm up as they cool, so don't overbake them.
Tips From My Kitchen
- Use natural peanut butter. Pick a runny one with no added oils or sugar. It blends more easily, makes the blondies fudgier, and keeps them healthier.
- Dry the chickpeas well. Extra water is the main reason chickpea blondies turn out gummy. Pat them dry with a towel before blending.
- Use a food processor if you can. The batter is thick, and a food processor gets it smooth fastest. A high-speed blender works in a pinch, but you'll need to stop and scrape it down often.
- Blend until completely smooth. Any chickpea pieces left in the batter will show up in the texture. Keep going until it looks like cookie dough.
Substitutions and Variations
These blondies are easy to adapt. Here are the swaps that work:
- Chickpeas: Cannellini or great northern beans work the same way, with the same fudgy texture.
- Peanut butter: Almond or cashew butter both work and give the blondies a slightly different flavor.
- Nut-free: To make chickpea blondies without peanut butter, use sunflower seed butter and oat flour. They may turn slightly green from a harmless reaction with the baking soda.
- Maple syrup: Honey works 1:1, but the blondies won't be vegan.
- Coconut sugar: Swap in brown sugar 1:1.
- Add-ins: Fold in chopped walnuts, dried fruit, or a swirl of your favorite nut butter.
- Toppings: Sprinkle crushed nuts, seeds, or shredded coconut on top before baking.

Why Are My Chickpea Blondies Gummy or Crumbly?
Gummy blondies usually come from wet chickpeas or underbaking. Crumbly blondies usually mean they were cut too soon or baked too long.
Gummy Chickpea Blondies
- Wet chickpeas: Pat them dry with a towel before blending. Extra water makes the texture dense and sticky.
- Underbaked: If a toothpick comes out wet, bake for 3 to 5 more minutes.
Crumbly Chickpea Blondies
- Cut too soon: Let them cool for 30 minutes before slicing. They firm up as they cool.
- Overbaked: Take them out once the edges are lightly golden, even if they still feel soft.
- Thick nut butter: Use a runny, natural peanut butter so the batter holds together.
How to Store and Freeze Chickpea Blondies
Store chickpea blondies in an airtight container in the fridge for up to 5 days, or freeze them for up to 3 months.
- Fridge: Let them cool completely first, then store them in an airtight container for up to 5 days.
- Freezer: Wrap each blondie individually or place them in a freezer-safe container for up to 3 months.
- Thawing: Thaw them overnight in the fridge or for a few hours at room temperature. Warm them briefly in the microwave for that fresh-baked texture.
