I've made tuna melts every which way over the years: under the broiler, in a skillet, pressed like a panini. This air fryer version is the one I keep coming back to. The bread crisps up in a way a skillet never quite nails, the cheese gets bubbly and browned at the edges, and the whole thing comes together in under 10 minutes without dirtying a single pan.
The trick that makes it mine: I use my viral no-mayo tuna salad as the base, so it's high in protein and doesn't sit heavy the way a mayo-loaded melt can. It's become my go-to lunch on days I want something warm and satisfying but don't want to think too hard; right next to my no mayo chicken salad recipe, too.

Why You'll Love This Recipe
- Quick and made in the air fryer: No oven required, just 10 minutes for the perfect tuna melt.
- Open-faced, crispy, and cheesy. Air frying gives the bread a golden crunch while melting the cheese to perfection.
- A healthier take on the classic sandwich. Made with high-protein tuna and Greek yogurt instead of mayo.
- Perfect for lunch or dinner. Whether you're meal prepping, working from home, or need something fast post-workout.
- Satisfying and single-serve. It's a quick, balanced meal that tastes indulgent but fits your healthy routine.
Why Make an Open-Faced Tuna Melt?
An open-faced tuna melt uses one slice of bread instead of two, with the tuna and cheese layered on top. I make mine this way for three reasons:
- Crispier bread: Without a top slice trapping steam, the bread stays crunchy instead of going soft.
- Better cheese: The cheese sits on top, so it gets bubbly and browned right under the air fryer's heat.
- Lighter and higher-protein: Using half the bread means fewer carbs and more room for protein-packed tuna in every bite.
Most tuna melts are closed sandwiches, but the open-faced version crisps faster and more evenly in the air fryer.

Just made this and OMG it's so good!! The bread got perfectly crispy in the air fryer, and the tuna filling was super flavorful. Love the Greek yogurt swap instead of mayo! It came together so fast and honestly tastes better than a diner tuna melt. Definitely making this again soon!

Ingredients You'll Need
Here's everything you'll need to make this crispy air fryer tuna melt. It's built on my no-mayo tuna salad, so most of these are simple pantry and fridge staples:

- Bread: I love using English muffins because they get super crispy and taste amazing. But sourdough, multigrain, white, or wheat all work, or whatever you have on hand. That's the best part about this recipe: it's totally customizable.
- Cheese: Sharp cheddar is my go-to for that classic melt, but mozzarella, Swiss, Monterey Jack, or even dairy-free cheese all work great.
- Tuna: Canned tuna in water has the best texture and flavor here. Just drain it well before mixing.
- Greek Yogurt: I like 0% or 2% Greek yogurt to replace mayo for a creamy, high-protein tuna salad. I do the same trick in my healthy Caesar salad dressing.
- Veggies: Celery and red onion add the perfect crunch and bite. Swap in cucumber, shredded carrot, or whatever you love.
- Dijon Mustard: Adds a subtle tang that pulls everything together.
- Lemon Juice: A little squeeze brightens up the tuna salad. Don't skip it.
- Parsley (optional): Adds a fresh, herby touch. Cilantro works too if that's what you have.
- Salt & Pepper: Season to taste.

Substitutions & Variations
- Make it gluten-free: Use gluten-free bread or English muffins. Everything else is naturally gluten-free.
- Make it dairy-free: Swap the Greek yogurt for a plant-based yogurt or mayo. I love Kite Hill's Greek-style for its thick texture and mild flavor.
- Use the oven or toaster oven: Try my healthy open-face tuna melts for the oven-baked version.
- Add tomato or avocado: Layer fresh tomato or avocado slices under the cheese before air frying.
- Use your favorite tuna salad: Already have a go-to? Use it here for a personal twist.
- Try pesto: Smear a little nut-free basil pesto on the bread for extra flavor.
- Add bacon: Crispy bacon under the cheese takes it to the next level.
- Spicy twist: Mix in hot sauce or diced jalapeños to heat things up.
- Kid-friendly: Use slider buns or cut into quarters for little hands.

How to Make Air Fryer Tuna Melts (Step-by-Step)
Making an air fryer tuna melt couldn't be easier. Toast the bread, mix the tuna salad, top with cheese, and let the air fryer do the rest. Here's how:

- Step 1: Toast the bread. Cut the English muffin or bread in half and place both halves face-up in your air fryer basket or tray.

- Step 2: Air fry lightly. Cook at 300°F for 2 to 4 minutes, until lightly toasted. Check at the 2-minute mark, since air fryer models vary.

- Step 3: Mix the tuna salad. In a medium bowl, combine the drained tuna, Greek yogurt or mayo, celery, red onion, carrots, parsley, Dijon mustard, lemon juice, salt, and pepper. Add capers if using.

- Step 5: Taste and adjust. Mix until well combined, then taste and adjust the seasoning or add more lemon juice if needed.

- Step 5: Assemble. Spoon the tuna salad evenly onto the toasted halves.

- Step 6: Add the cheese. Top each half with a slice of sharp cheddar.

- Step 7: Melt and crisp. Return to the air fryer at 300°F for 5 to 8 minutes, until the cheese is melted and bubbly and the edges are crisp.
Tips for the Best Air Fryer Tuna Melt
- Toast the bread first: Giving your English muffin or bread a quick toast before adding the tuna locks in that crisp texture. It's a small step that makes a big difference.
- Drain the tuna well: Press out as much liquid as you can so the tuna salad isn't watery. This keeps the melts crispier and less messy.
- Don't overload it: Keep the tuna layer moderate. Too much filling weighs things down and stops the cheese from melting evenly.

What to Serve with an Air Fryer Tuna Melt
This tuna melt is filling enough to eat on its own, but it's easy to round out into a full meal. Here are my favorite things to serve alongside it:
- Keep it simple: I usually serve this with a handful of kettle chips, sliced cucumbers,, air fryer pita chips, or a pickle on the side. Quick, easy, and satisfying.
- Add a salad: Pair it with a fresh green salad, watermelon feta salad, Caesar salad, or my cucumber carrot salad for a more balanced meal.
- Soup and sandwich vibe: It's perfect with a cozy bowl of dairy-free tomato soup or my cauliflower leek potato soup on colder days.
- Make it brunchy: Add a fried egg on top and serve with fruit for a high-protein breakfast or brunch.
Air Fryer Tuna Melt FAQs
I love English muffins because they get super crispy in the air fryer, but sourdough, multigrain, or any sturdy sliced bread works too. Just toast it lightly first so it doesn't get soggy.
Any cheese that melts well works. My go-to is sharp cheddar, but Swiss, mozzarella, and Monterey Jack are all great. Avoid cheeses like feta, goat cheese, queso fresco, and halloumi, since they don't melt smoothly.
Totally. Mayo works great. I usually go with Greek yogurt for a lighter, high-protein option, but you can use mayo, yogurt, or a mix of both depending on your taste.
They're best fresh, especially since this is a single-serve recipe. I don't recommend assembling the full melt in advance since the bread gets soggy, but you can prep the tuna salad up to 4 days ahead and put the melt together in minutes when you're ready to eat.
Yes, it's a healthier take on the classic. It's high in protein from the tuna, uses Greek yogurt in place of mayo to cut the fat, and stays open-faced so you get all the melty, cheesy flavor with less bread. Pick a whole-grain bread or English muffin, and it's a balanced, satisfying lunch.
Canned tuna in water is best for this recipe. It has a cleaner flavor and lighter texture that work well with the Greek yogurt, and it keeps the melt higher in protein and lower in fat. Just drain it well so the tuna salad isn't watery. Tuna in oil works too if that's what you have, though it makes for a richer, heavier melt.
