What are air fryer pita chips?
Air fryer pita chips are pita bread cut into triangles, lightly coated with oil and seasoning, and air-fried until golden and crispy in about 6-9 minutes.
Why You'll Love These Pita Chips
- Choose your perfect crunch: Use thin pita for extra crispy chips or thicker pita for a more restaurant-style bite
- Consistently crispy: Tested across different pita types so you don't end up with soggy or burnt chips
- No deep frying needed: Golden and crunchy with just a light coating of oil
- Works with any pita you have: Pocket, flatbread, whole wheat, or gluten-free all work with simple timing adjustments
- Easy to customize: Go savory (garlic, za'atar, everything bagel) or sweet (cinnamon sugar)
- Great for more than dipping: Use for snack boards, salads, soups, or quick appetizers
Ingredients You'll Need

- Pita bread - This determines the texture. Thin pita = extra crispy, while thicker or pocket pita gives a more restaurant-style bite (my favorite). Whole wheat and gluten-free both work.
- Olive oil - Helps the chips turn golden and crisp. Just a light coating is enough - too much can make them heavy.
- Sea salt - Simple but essential for bringing out the flavor.
- Seasonings (optional) - Garlic powder, za'atar, smoked paprika, everything bagel, parmesan, or cinnamon sugar - easy to switch up depending on what you're serving.

The Best Pita Bread for Air Fryer Pita Chips
The type of pita you use makes a big difference in how your chips turn out. I've tested a few options, and here's what to know:
- Thin or Lebanese-style pita: extra crispy and light, similar to store-bought chips
- Pocket pita (split in half): thin, evenly crispy chips
- Whole pocket pita (not split): thicker, more restaurant-style with a little chew
- Greek or thicker pita: sturdier chips that are great for scooping but need a bit more time
If you're not sure what to use, go with pocket pita and split it in half. It's the easiest way to get consistently crispy chips.
Whole-wheat and gluten-free pitas both work, too. Just keep an eye on them while cooking since the thickness can vary by brand.
Easy Substitutions & Variations
- Gluten-free: Use your favorite gluten-free pita
- Dairy-free & vegan: This recipe is naturally both
- Parmesan herb: Add 2 tablespoons grated Parmesan + 1 teaspoon Italian seasoning
- Cinnamon sugar: Brush with 2 tablespoons melted butter, then sprinkle with 1 tablespoon cinnamon + 2 tablespoons sugar
- Spicy paprika: 1 teaspoon smoked paprika + ½ teaspoon cayenne + ½ teaspoon garlic powder
- Everything bagel: 1 tablespoon sesame seeds + 1 teaspoon poppy seeds + 1 teaspoon dried garlic + 1 teaspoon dried onion + pinch of salt
- Chili lime: 1 teaspoon chili powder + lime zest + pinch of cayenne
- Ranch: 1 teaspoon dried dill + 1 teaspoon onion powder + ½ teaspoon garlic powder + pinch of salt
How to Make Crispy Air Fryer Pita Chips (Step-by-Step)

- Step 1: In a small bowl, whisk together the olive oil and any seasonings until combined.

- Step 2: Cut each pita into triangles (about 8-10 per pita). For crispier chips, split the pocket pita in half before cutting.

- Step 3: Spread the pita triangles out on a plate or cutting board so they're easy to work with.

- Step 4: Brush both sides of each triangle with the oil mixture so they crisp up evenly.

- Step 5: Place the pita in a single layer in the air fryer basket. Work in batches if needed so they don't overlap.

- Step 6: Air fry at 320°F for 6-9 minutes, depending on thickness. Start checking at 6 minutes, so they don't burn.
Cook time will vary slightly depending on how thick your pita is, so start checking early.

Expert Recipe Tips
- Pick the right pita for your texture: Thin, split-pocket pita gives you extra crispy chips (like store-bought), while whole pitas create a thicker, more restaurant-style bite (my favorite).
- Adjust cook time based on thickness: Thin pita crisps in about 6 minutes, while thicker pitas take closer to 8-9 minutes. Start checking early so they don't burn.
- Don't overcrowd the basket: Keep the pita in a single layer so it crisps evenly. If they overlap, they'll steam rather than get crunchy.
- Use a little oil for best results: I've tested both ways, and a light brush or spray of oil gives a more golden, flavorful chip. Without it, they'll still crisp, just a bit drier.
Why Your Pita Chips Aren't Crispy
If your pita chips aren't turning out crispy, here's what actually makes the difference:
- Overcrowded basket: If they overlap, they'll steam instead of crisp
- Pita is too thick: Use thinner pita or split pocket pita for more crunch
- Not enough olive oil: A light coating helps them turn golden and crisp
- Undercooked: They may need an extra minute or two
- Didn't cool: They crisp up more as they sit

What to Serve with Air Fryer Pita Chips
- With dips: Serve warm pita chips with healthy hummus, easy low-fat tzatziki, or fresh 4-ingredient guacamole. They're also perfect with baba ganoush, healthy ranch dip, spinach-artichoke dip, or this avocado green goddess dressing.
- As a salad topper: Crumble over Greek salads, Mediterranean dense bean salad, or a simple green salad for extra crunch.
- With soup: Use like croutons with healthy tomato soup, Greek chickpea soup, or turkey lentil soup.
- On a snack board: Add to a mezze-style platter with olives, cheese, veggies, and nuts.
- For a sweet option: Try cinnamon-sugar pita chips with yogurt, fruit salsa, or a drizzle of honey.
Frequently Asked Questions
You can, but they're much better with a little oil. A light brush or spray helps them turn golden, crisp, and more flavorful. Without it, they'll still cook but come out a bit drier.
This usually happens when the basket is overcrowded or the pita overlaps. Keep them in a single layer and let them cool after cooking - they crisp up more as they sit.
Yes! Brush lightly with oil or butter, then sprinkle with cinnamon sugar before air frying. Great with yogurt or fruit.
Yes. I reccomend flipping halfway through so both sides crisp up evenly.
Yes. Bake at 375°F for 10-12 minutes, flipping halfway, until golden and crisp.
How to Store and Re-Crisp Them
Storage: Let the pita chips cool completely before storing - if they're still warm, steam will make them soggy. Store in an airtight container at room temperature for up to 5 days.
Re-crisping: If they lose their crunch, air fry at 320°F for 1-2 minutes until crisp again.
