Best Ever Healthy Crispy Sweet Potato Wedges
I absolutely L O V E sweet potatoes. They could be my favorite vegetable. On top of that, if you know me, I put balsamic vinegar and vinaigrette on everything. Yes, even on my pizza and salmon. It’s just the best seasoning. So why not combine my two favorite flavors!
These crispy sweet potato wedges are my go-to side dish. I make these almost every night with dinner. They go perfectly with any meet, fish or salad.

Cheers to another easy and simple recipe with minimal ingredients. You only need 5 ingredients, four of which are definitely in your pantry. All I needed to do for this recipe is pick up a hug bag of sweet potatoes to last me the whole week!
How to make sweet potato wedges and fries
Sounds scary, I know, but making sweet potato fries are so easy. My 10-year-old brother can do it. All you have to do is wash, dry, and cut the sweet potatoes into the wedge size you want. Toss your fries with some avocado or olive oil and balsamic vinegar, sprinkle some salt and pepper on top and then space them across a lined baking sheet. 40 minutes later…. DONE! Your perfect sweet potato wedges are ready to eat.
So why am I obsessed with these balsamic sweet potato fries?
Because they are amazing. They are just so tender and crispy. And don’t forget super tasty and mouthwatering. They have the perfect crunch on the outside, yet are deliciously tender on the inside. Plus, they could not be any easier to make. I honestly make mass batches (x3 the recipe below) of these bad boys and try to make them last the entire week. They hold up great in the fridge and only take 30 seconds to heat up in the microwave. These fries are perfect as a lunch or dinner side. I’ll be making these all summer long, especially with barbecuing season around the corner!
Made extra sweet potato wedges?
For best results, store in a covered airtight container in the fridge for 3 – 5 days. Simply heat up in the microwave for 30 seconds – 1 minute or enjoy cold!

Crispy Baked Balsamic Sweet Potato Fries
- 1 - 2 medium sweet potatoes
- 1 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1/2 tsp salt
- 1/2 tsp ground pepper
- Preheat oven to 425 F and line a baking sheet with parchment paper or aluminum foil.
- Wash and cut sweet potato wedges / thick fries (you can remove the skin if desired). Dry and add to a large bowl.
- In the large bowl, combine all ingredients. Mix and evenly coat all sweet potato wedges.
- Evenly spread sweet potatoes on the lined baking sheet and place into the heated oven. Cook for a total of 35 - 40 minutes. Around the 25 minute mark, flip sweet potatoes over.
- Pair with your favorite dipping sauce, serve as a side, or add to a large salad! Enjoy 🙂
