This is my most-made weeknight dinner, and I genuinely look forward to it every time. Top sirloin, cast iron, garlic butter, hot honey - simple ingredients that come together in 15 minutes with ~25g of protein. And they pair perfectly with my Crispiest Oven Roasted Potatoes!
I've tested this recipe more times than I can count, and I've figured out exactly what makes it work. A screaming-hot pan, steak that's patted completely dry, and garlic that goes in off the heat so it never burns. These small details make a huge difference.
It meal preps like a dream, too, which is why it's always on my Sunday list. If you love easy high-protein dinners, you'll also want to try my Hot Honey Chicken Tenders and Healthy Beef Stew.

Why You'll Love This Recipe
- Ready in 15 minutes - faster than ordering takeout
- 25g of protein - a genuinely high-protein dinner that keeps you full
- One pan, zero fuss - minimal ingredients, minimal cleanup
- No marinade needed - the garlic butter does all the work
- Sweet heat finish - the hot honey drizzle takes it completely over the top
- Perfect for meal prep - make a batch on Sunday and eat well all week
Ingredients You'll Need

- Top sirloin steak - My go-to cut for this recipe. It's lean, tender, and gives you the best protein-to-fat ratio of any steak cut. Ribeye works too if you want more richness, but sirloin is my everyday choice.
- Avocado oil - This is the one swap that actually matters. Avocado oil has a smoke point around 500°F - way higher than olive oil - which means you get a proper golden sear without burning. Don't skip it.
- Butter - Just 1.5 tablespoons creates a rich, glossy sauce that coats every single bite. Use ghee to keep it dairy-free or Whole30-compliant.
- Fresh garlic - One large clove, minced. Fresh only - jarred garlic won't give you the same depth of flavor here.
- Kosher salt + black pepper - Simple seasoning that lets the garlic butter shine.
- Hot honey - The ingredient that makes this recipe yours. Drizzled on at the end, it adds a sweet heat that plays perfectly off the rich garlic butter. Mike's Hot Honey is my favorite, or make your own with my Hot Honey Chicken Tenders recipe - same honey, different protein.

Easy Substitutions & Variations
- Steak cut - Ribeye or New York strip both work great. Avoid flank or round - too tough for high-heat cooking.
- Butter swap - Use ghee for dairy-free or Whole30. Same rich flavor, zero compromise.
- No hot honey - Skip it for a classic garlic butter version, or add red pepper flakes for heat without the sweetness.
- Worcestershire sauce - Add 1 teaspoon with the garlic butter for a deeper, umami-forward flavor.
- Air fryer version - Season the same way, air fry at 400°F for 5-7 minutes. Make the garlic butter separately and toss after.
- Crockpot or slow cooker - I do not recommend this recipe for this. The high-heat sear is what makes these special. Low and slow will give you a completely different - and far less exciting - result.
How to Make Hot Honey Garlic Butter Steak Bites (Step-by-Step)

- Step 1: Prep the steak. Cut into 1-inch cubes, pat completely dry, and season generously with salt and pepper.

- Step 2: Sear. Heat a cast-iron skillet over high heat, add avocado oil, and swirl to coat. Add the steak bites in a single layer and sear undisturbed until a golden crust forms. You're aiming for 130-135°F internally for medium-rare.

- Step 3: Make the garlic butter. Remove the pan from the heat, then add butter and minced garlic. Let the residual heat do the work - this is how you get perfect garlic without burning it.

- Step 4: Toss and finish. Add the steak and resting juices back into the pan. Toss until everything is coated in garlic butter, then finish with a hot honey drizzle and fresh herbs. Serve immediately.
Expert Tips
- Get your pan screaming hot before anything goes in. I cannot stress this enough. If the pan isn't hot enough, the steak steams instead of sears, and you lose that golden crust entirely. Give it at least 2-3 minutes over high heat before the oil even touches it.
- Pat your steak completely dry. This was my biggest mistake early on. Surface moisture is the enemy of a good sear - it creates steam and prevents browning. Thirty seconds with a paper towel makes a genuinely noticeable difference.
- Never crowd the pan. I learned this the hard way. Too many pieces in the pan at once, drop the pan temperature immediately, and you end up with gray, sad steak instead of golden bites. Cook in two batches if you need to - it's worth the extra few minutes.
- Garlic goes in off the heat - always. I burned the garlic so many times before I figured this out. Take the pan completely off the burner first, then add the butter and garlic. The residual heat does all the work without risking bitterness.
- Pour the resting juices back in. When the steak rests on the plate, juices pool underneath. That's pure flavor - don't leave it behind. Pour it all back into the pan when you toss everything in the garlic butter.
How to Air Fry Steak Bites
If you don't have a cast-iron or stainless steel skillet or want an even easier option, the air fryer works beautifully.
Season the steak bites the same way, air fry at 400°F for 5-6 minutes, shaking halfway, then toss immediately in garlic butter made separately on the stovetop. Finish with the hot honey drizzle. Not quite the same crust as cast iron, but still incredibly good.

What to Serve with Garlic Steak Bites
These pair well with just about anything, but here are my favorites:
- Air Fryer Sweet Potato Wedges - my go-to pairing. The sweetness plays perfectly off the hot honey and garlic butter.
- Mashed potatoes - the garlic butter doubles as a sauce. Trust me. For a low-carb version, try my Creamy Mashed Cauliflower Recipe.
- Crispy potatoes - try my Crispy Oven Roasted Potatoes or Crispy Air Fryer Smashed Potatoes for that classic steak-and-potatoes combo.
- Roasted asparagus or broccolini - keeps it light and balanced. I love this crispy Air Fryer Broccolini.
- Jasmine or cauliflower rice - great for meal prep bowls.
- Simple arugula salad - the freshness cuts through the richness perfectly.
Storage & Meal Prep Tips
- Fridge - Store in an airtight container for up to 4 days.
- Reheat - Warm in a skillet over medium-low heat with a small pat of butter for the best texture. Microwave works in a pinch, but I don't love it - 30-60 seconds on medium power.
- Freezer - Freeze for up to 2 months. Thaw overnight in the fridge and reheat in a skillet.
- Meal prep - These hold up great. Portion into containers with rice and roasted veggies, and you're set for the week.
Frequently Asked Questions
Top sirloin is my top pick - it's lean, tender, and high in protein without breaking the bank. Ribeye works if you want more richness, and New York strip is a great middle ground. Avoid flank or round - they're too tough for high-heat cooking.
Three things: pat the steak completely dry, get your pan screaming hot before anything goes in, and don't touch the steak for the first 2 minutes. That's it. Resist the urge to move them around.
Yes - especially made with top sirloin. Each serving has around 25g of protein and is naturally gluten-free and low in carbs. Use ghee instead of butter, and they're fully dairy-free and Whole30-compliant too.
They're best fresh out of the pan, but they store well in the fridge for up to 4 days. Reheat in a skillet with a small pat of butter over medium-low heat - they come back to life surprisingly well.
It sounds unexpected, but it works beautifully. The sweetness balances the richness of the garlic butter, and the heat adds a slow burn that makes every bite more interesting. Once you try it, you won't go back.

Hot Honey Garlic Butter Steak Bites
Ingredients
- 1 lb steak, (ribeye, strip, or sirloin), cut into 1-inch chunks
- 2 teaspoon avocado oil
- ½ teaspoon kosher salt + pinch of black pepper
- 1.5 tablespoon butter
- 1 large garlic clove, minced
- Fresh herbs, chives or parsley, for garnish
- Drizzle of hot honey
Instructions
- Preheat your pan. Heat a large skillet (I love cast iron) over high heat. While it heats, toss the steak pieces with salt and pepper.
- Sear the steak. Add avocado oil to the hot pan and swirl to coat. Add the steak bites in a single layer. Let them sear undisturbed so you get a nice crust.
- Flip + finish cooking. Flip after about 2-3 minutes. They cook fast! Pull at 130-135°F for medium-rare - use an instant-read thermometer for best results.
- Remove and make the garlic butter. Transfer steak bites to a plate. Take the pan off the heat, then add butter and garlic. Toss quickly so the garlic doesn't burn.
- Let the garlic cook gently. If needed, place the pan back on low heat just until the butter melts and garlic is lightly golden (about 30-60 seconds).
- Toss everything together. Add the steak (and juices) back into the pan with fresh herbs. Toss until everything is coated in that garlic butter.
- Serve immediately. Best served hot - juicy, buttery, and so good. Drizzle with hot honey and some fresh herbs for the best taste!
